Cheesecake Especial

Con este cheesecake bote el bate y la pelota,,,jajaja,, trate de hacer unos lunares de chocolate dentro y experta en pasteleria como soy, parece que use la boquilla equivocada y no me quedaron redonditos los lunares, gracias a Dios que quedo buenisimo, la proxima me quedara mejor.
 

Ingredientes

Crust
1 taza de galletas trituradas
2 cdas de azucar
¼ taza de mantequilla derretida

Relleno
16 oz cream cheese
½ taza de azucar
2 huevos
2 oz chocolate derretido
1 cdta vainilla
2/3 taza de crema agria

Preparacion
Precalienta el horno a  300 grados F. Engrasa el molde.
En un recipiente pequeno mezcla las galletas, mantequilla y azucar y ponla en el molde, presionando firme.

 Bate el queso crema hasta que este suavecito, ve agregando el azucar y los huevos uno a la vez, agrega vaninilla y crema agria, sigue mezclando hasta que este bien suavecito. Reserva 1/2 taza del relleno en un recipiente aparte.

Derrite el chocolate a bano de maria o en el microondas y mezclalo con la 1/2 taza de relleno que reservaste.

Vierte la mezcla de cheesecake en el molde. Para hacer los lunares se supone que en una manga de pasteleria echas las mezcla de chocolate y la introduces dentro de la mezcla de cheesecake poco a poco para ir haciendo los lunares. 

Hornea por una hora, apaga el horno y dejalo enfriar totalmente dentro del horno, luego ponlo en la nevera, si quieres ponlo en freezer 15 minutos antes de servirlo y corta con un cuchillo pasado por agua caliente.
 




Black Beans rice with coconut


Rice is the base of Dominican cuisine, that's why we always try to add some extra flavors, at some part of our country they used a lot of coconut, when you add coconut milk to this rice,,, the result its absolutely awesome!!!

Ingredients
  • 4 cups of rice
  • 3 cups of boiled black beans
  • 2 cups of coconut milk
  • 4 cups water
  • 2 tablespoons of oil
  • 4 teaspoons of tomato paste (optional)
  • 1/4 cup of chopped green peppers
  • 1 pinch of oregano
  • 1/2 teaspoon mashed garlic
  • 1/4 cup of chopped celery
  • 1 teaspoon of finely chopped coriander/cilantro
  • 1/2 teaspoon of thyme leaves
  • 1 teaspoon of salt
  • 12 pitted olives cut into halves
Instructions
  1. Heat 1 tablespoon of oil in an iron pot and add the cilantro, celery, garlic, olives, thyme, peppers, oregano and salt.
  2. Stir while adding the tomato paste. Add beans, also while stirring.
  3. Once well heated, add the water and coconut milk and bring to a boil.
  4. Add the rice and stir regularly removing as much as you can of the rice that sticks to the bottom.
  5. When all the water has evaporated cover with a tight-fitting lid and simmer over very low heat.
  6. Wait 15 minutes, uncover, add the remaining oil and stir.
  7. Move the rice from the bottom to the top so it cooks uniformly.
  8. Cover again and wait another 5 minutes.
  9. The rice should be firm but tender inside.
  10. If necessary, cover and leave another 5 minutes on very low heat.

Fish in Coconut Sauce

Fish in Coconut Sauce

Ingredients
  • 2 pounds Tilapia fillets
  • 2 peppers cut into strips
  • 1 teaspoons of crushed garlic
  • 1 tbsp tomato paste
  • 2 cups of  coconut milk
  • 2 tablespoons of cilantro finely chopped
  • 4 tablespoons of oil
  • 1 onion cut into strips
  • Salt and pepper
Instructions
Cuts the fish in stripe or cube 
Salt and pepper the fish for both sides
Heat oil in a pan over medium heat.
Lightly brown fish on one side, rotate and cook other side equally, drain on a paper towel and reserve.
Add the pepper strips and onion and sauté until the onions become transparent add garlic, tomato paste.
Add coconut milk and cilantro, taste and season with salt
Simmer over medium heat until the liquid reduces to half.
When the sauce thick add the fish and reduced the heat, let the fish to infuse with all the flavor and remove from the heat.
Serve hot. (Usually we serve with white rice or tostones)



Rice with smoked pork chops and dominican sausage










Have you ever tried it? If not, you must absolutely do.


Ingredients


  • 3 cups of rice
  • 1  pound of longaniza (dominican spicy pork sausage), cut into slices
  • 1  pound smoke pork chops
  • 2 tablespoons of olive oil
  • 1 cup of tomato sauce
  • 1 bell pepper, cut into small pieces
  • 1 small red onion, diced
  • 1 cup of diced tomatoes
  • A pinch of oregano
  • 2 garlic cloves, crushed 
  • 1 tbsp cilantro
  • Pepper
  • Salt
Directions

  1. In a pot heat the oil over medium heat.
  2. Brown the sausage.
  3. Lower the heat and add the peppers, onion garlic, and tomatoes. Cook and stir until onions become transparent.
  4. Add the tomato sauce and oregano and mix well.
  5. Add rice  and cilantro and mix well.
  6. Cover and simmer over low heat for 25 minutes.
  7. Serve hot.

Noodle rice



Rice is the base of Dominican cuisine, and arroz con fideos is one of an endless list of adaptations we have made to exotic dishes from other countries. It is very tasty, with a nice contrast of colors and textures, it is also easy to prepare and makes a great substitute for arroz blanco or White rice.


Ingredients
  • 4 cups of rice
  • 1/2 cup of angel hair noodles
  • 5 cups of vegetable or chicken broth (see notes) 
  • 2 clove of garlic minced
  • 5 tablespoons of oil
  • Salt

Instructions

In a deep bottom pot heat 3 tablespoons of oil, over medium heat.
Add the noodles (uncooked) and cook and stir until they are golden brown being careful not to let them burn.
Add garlic and rice and stir until all the rice is covered in the oil.
Try the broth and add salt if it is necessary. Add the boiling broth. Stir regularly to avoid excessive sticking.
When all the liquid has evaporated cover with a tight fitting lid and simmer over very low heat.  



Wait 15 minutes and uncover. Stir, add the remaining oil and cover again. Wait another 5 minutes. Try the rice, it should be firm but tender inside. If necessary, cover and leave another 5 minutes over very low heat. 

Serve with meat or seafood.

Nutella Flan


Many friends like Nutella, but my nephew Gaby and my niece Michelle they like it and I know, they will love this flan. This is super easy to make and I have to say DELICIOUS.

Ingredients
1 can of evaporate milk
1 can of condense milk
1 cup of  Nutella
5 eggs
1 tsp vanilla extract
1 tsp cocoa powder
1 cup of sugar (Caramel)

Directions

Preheat your oven to 400F.

In a medium saucepan over medium-low heat, melt sugar until liquefied and golden in color. Carefully pour hot syrup into a baking dish, turning the dish to evenly coat the bottom and sides. Set aside.
 
Blend really well the eggs, milk, condensed milk, chocolate powder, Nutella and vanilla.
 
On a deep baking sheet fill it with water. Sit your flan pan inside the deep baking sheet with water and to the oven it goes for about 1 hour and 10 min.

Wait till it cools off before taking it out of the flan pan, otherwise it will lose the shape.

 






 

Mojito de Coco

Si usted hace un mojito con coco,,,, como le llamarias,,,, "Cojito" jajaja; es un trago perfecto para el calor del verano, cremoso, refrescante y tiene esa combinacion rica de menta y coco, 

Ingredientes
4  tazas de hielo
2 limones sin la cascara
7 oz crema de coco
1.5 oz ron
5 ramitas de menta

Para decorar
Hojas de menta
rueditas de limon

Preparacion

Licua limon, hielo, crema de coco, ron y las hojas de menta en la licuadora hasta conseguir una mezcla homogenea, si prefieres, cuelalo, sino sirvelo de inmediato. Decora con las hojas de menta y la ruedita de limon.
