Salmon Cakes

Salmon Cakes

1 can salmon (drained)
1 egg
1/3 cup fresh chives o green onions
1/2 cup bread crumbs
1/2 cup frozen peas or corn
2 tablespoon mustard
2 tablespoon mayonnaise
1 tablespoon olive chopped
1 tablespoon lemon juice

1 teaspoon lemon zest
3 tablespoon oil


Using a folk flake the salmon, remove the skin. In a medium bowl mix egg, chives, 1/2 of bread crumbs, peas mustard, mayonnaise, olive, lemon zest, lemon juice and mix gently until just combine.

Make the patties the size you desire, if the mixture is too dry just add extra mayonnaise or mustard. Carefully coat the patties in the remaining bread crumbs.

In  a large nonstick skillet, heat the oil over medium heat add the patties and cook until golden brown and crispy. About 5 o 6 minutes. Serve with green salad.
